Enzymes
Enzymes are now employed in the food industry to make everything from bread to wine, beer, juice, and dairy processing, among other things. Enzymes are a natural way to keep bread softer for longer, they allow us to use native grains like cassava to produce beer, and they allow us to make lactose-free dairy products.
